Every autumn, we wait long after the rest of the harvest is in until a benevolent mold, Botrytis cinerea, settles over the fruit and quietly changes everything.
It draws the water from each berry and concentrates what remains: sugar, acid, and a depth of flavor found nowhere else. The French named it la pourriture noble — the noble rot. We call it the beginning of Dolce.
What follows is measured in patience. The fruit is hand-selected cluster by cluster, pressed, then barrel-aged and released only when it’s ready. The result is honeyed apricot, orange blossom, and citrus, held in balance by an acidity that keeps the wine bright.
