White wines run the full range from bone-dry to richly sweet. The white wines by Far Niente Wine Estates are dry, made to let the grape and the vineyard speak. Far Niente Chardonnay, for instance, is fermented fully dry. Its depth comes from barrel fermentation, lees aging, and the quality of the fruit itself, not residual sugar.
White wine should rest on its side at a steady 45 to 55°F (7–13°C), away from light, heat, and vibration. Far Niente Chardonnay in particular rewards careful cellaring. A few years in bottle bring added complexity and depth when conditions are right. For everyday drinking, the refrigerator is a perfectly fine home for a few weeks.
White wine is best served between 50 and 55°F (10–13°C). Too cold and the aromatics tighten; too warm and the freshness fades. With Far Niente Chardonnay, taking the bottle from the refrigerator 10 to 15 minutes before pouring lets the stone fruit, citrus, and subtle oak find their place in the glass.
White wine pairs beautifully seafood, poultry, vegetables, and dishes built on butter or cream. Far Niente Chardonnay is especially at home with lobster, crab, roasted chicken, scallops, and pasta in light cream sauces. Its bright acidity and full body make it one of the most adaptable wines in our portfolio, making it fine as an aperitif, and finer still alongside a thoughtfully composed meal.
